Mixed Bean Salad
You will need:
Salad:
3 tins of various beans or
900g of any cooked beans
1 small capsicum, diced or chopped
1/2 Lebanese cucumber, chopped
1 small spanish onion, sliced
Dressing:
1/2 cup olive oil
3 tbsp vinegar
2 tbsp brown or raw sugar
1/2 tsp mustard - dry or wet
1 garlic clove (optional)
1 tsp basil – fresh or dried
Method:
1 Rinse any tinned beans.
2 Combine ingredients in a salad bowl.
3 Mix dressing in screw top jar. Shake well.
4 Pour dressing over salad, toss lightly.
5 Refrigerate.
